Gourmet chef Richard Rauch develops alpine dishes together with hut hosts

Alpine cuisine in Schladming-Dachstein has been available in summer and winter since 2019 - a cuisine that preserves the original while breaking new ground. Over the past five years, award-winning chef Richard Rauch and 16 chefs from the region have impressively demonstrated how these components can be combined on the plate. In his “Almkulinarik”, the familiar meets creative refinement: the chicken knuckle is marinated in Swiss stone pine buttermilk, the crème brûlée is cooked with meadow herbs - regional thinking interpreted in a contemporary way.
